Healthy Banana Bread

Ingredients

  • ⅓ cup melted coconut oil (or olive oil)
  • ½ cup honey or maple syrup
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • ¼ cup milk of choice or water
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1¾ cups white whole wheat flour or whole wheat flour
  • Optional: ½ cup chopped nuts, chocolate chips, or dried fruit

Directions

  1. Preheat oven to 325°F and grease a 9×5-inch loaf pan.
  2. Whisk oil and honey together, then whisk in eggs, bananas, and milk.
  3. Add baking soda, vanilla, salt, and cinnamon; whisk to combine.
  4. Stir in flour until just mixed. Fold in any optional add-ins.
  5. Pour batter into pan, sprinkle with cinnamon, and swirl with a knife if desired.
  6. Bake 50–55 minutes, until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
