Healthy Banana Bread

Ingredients
- ⅓ cup melted coconut oil (or olive oil)
- ½ cup honey or maple syrup
- 2 eggs
- 1 cup mashed ripe bananas (about 2-3 bananas)
- ¼ cup milk of choice or water
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1¾ cups white whole wheat flour or whole wheat flour
- Optional: ½ cup chopped nuts, chocolate chips, or dried fruit
Directions
- Preheat oven to 325°F and grease a 9×5-inch loaf pan.
- Whisk oil and honey together, then whisk in eggs, bananas, and milk.
- Add baking soda, vanilla, salt, and cinnamon; whisk to combine.
- Stir in flour until just mixed. Fold in any optional add-ins.
- Pour batter into pan, sprinkle with cinnamon, and swirl with a knife if desired.
- Bake 50–55 minutes, until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
