Pumpkin Cookies

Ingredients
- 1/2 cup butter (sweet cream salted)
- 1 cup granulated sugar
- 1 cup canned pumpkin
- 2 large eggs
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 2 cups all-purpose flour
- 1 cup chopped walnuts or pecans (optional)
- 1/2 cup butter, slightly softened (salted sweet cream)
- 8 oz cream cheese, softened
- 1 pound powdered sugar (4 cups)
- 3 teaspoons vanilla extract
Directions
- In a mixer, cream the butter and sugar until light and fluffy.
- Add eggs and pumpkin and mix well.
- Sift flour, baking powder, salt, and spices together and fold into the cookie batter.
- Mix until well blended.
- Drop spoonfuls of the cookie batter onto a cookie sheet and flatten slightly with a spoon.
- Bake in a 350 degree oven for approximately 12 minutes.
- Allow cookies to cool completely.
- To make the frosting, beat the butter and cream cheese together until smooth.
- Gradually add the powdered sugar and mix until fully incorporated.
- Add vanilla extract and mix until light and fluffy.
- Frost cooled cookies and sprinkle with cinnamon if desired.
