Amish Lemon Crisps

Ingredients

  • Cookies:
    • 1 3/4 cups shortening (used butter melted)
    • 1 cup white sugar
    • 1 cup brown sugar
    • 2 Tablespoons lemon juice (a little more)
    • 2 eggs
    • 2 1/2 teaspoons lemon rind ( a little more)
    • 5 1/2 cups flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon soda
  • Frosting
    • 1 cup confectioners sugar
    • 1-2 tbsp lemon juice
    • lemon rind

Directions

  1. Preheat oven to 350
  2. Mix all cookie ingedients.
  3. Roll into small balls and flatten on cookie sheet. The thinner the better.
  4. Bake at 350 for 10 - 12 minutes.
  5. Mix all icing ingredients and spread on cookies when cool.
  6. *Hot tip: Replace lemon with orange for orange crisps!
