Amish Lemon Crisps

Ingredients
- Cookies:
- 1 3/4 cups shortening (used butter melted)
- 1 cup white sugar
- 1 cup brown sugar
- 2 Tablespoons lemon juice (a little more)
- 2 eggs
- 2 1/2 teaspoons lemon rind ( a little more)
- 5 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon soda
- Frosting
- 1 cup confectioners sugar
- 1-2 tbsp lemon juice
- lemon rind
Directions
- Preheat oven to 350
- Mix all cookie ingedients.
- Roll into small balls and flatten on cookie sheet. The thinner the better.
- Bake at 350 for 10 - 12 minutes.
- Mix all icing ingredients and spread on cookies when cool.
- *Hot tip: Replace lemon with orange for orange crisps!
